Sound expensive?  Years ago John brought home a salsa recipe from the wife of one his distributors in Texas.  Later the distributor  went out of business owing the family company about $10,000.  John always joked that he liked the salsa so much that it might have been worth it.  I hope you like it as much as we do. Oh, one word of warning, this doesn’t keep for long periods of time in the fridge. We usually make it and use it the same day.

 

 

 



Ingredients

2-3 fresh, ripe tomatoes

1 Jalapeno pepper diced small (matchstick sized squares) (leave out seeds for mild, add seed to increase heat)

¼ C diced Green Bell Pepper

1 medium sweet onion (diced)

2 Tblsp fresh chopped cilantro

1 Tblsp sugar

1 Tsp salt

1 Tsp ground black pepper

1 dash pepper sauce (like Tobasco) (increase if you like it hot)

2 Tblsp olive oil

Juice from ¼ lime

 

Cut up and mix all ingredients. Eat with Corn Chips.
