Shabu Shabu for Sarah's Bithday

When I used to travel for business, I went to Japan regularly. My favorite meal, there was Shabu Shabu. The Japanes told us it was named for the sound it makes when you are cooking it. The vegetables are boiled in water and while they are cooking, you take a piece of the paper-thin meat and swish it around in the boiling water with your chop sticks making a "shabu shabu" noise until the meat isn't pink anymore. I know, you're thinking, GROSS! boiled beef? But then you dip it in a soy-lime sauce and it is incredible! It is one of the favorite birthday meal choices at our house. It's lots of work to prepare, though!
